Crust ingredients
  • 1 package Oreo cookies Crushed into fine crumbs
  • 1/4 cup unsalted butter, melted
Cheesecake filling ingredients
  • 16 oz cream cheese, softened Make sure it’s at room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping
Topping ingredients
  • 1 cup fresh strawberries, diced Use ripe strawberries for the best flavor

Method
 

Preparation
  1. Crush the Oreo cookies in a food processor until they become fine crumbs. Mix the crumbs with melted butter until fully combined.
  2. Press this mixture into the bottom of a greased 9x9 inch baking pan to form a firm crust.
Cheesecake mixture
  1. In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy.
  2. Gently fold in the whipped topping until everything is well combined.
Assembly
  1. Pour the cheesecake mixture over the Oreo crust, smoothing the top to create an even layer.
  2. Top with diced strawberries, pressing them gently into the cheesecake layer to secure them.
Chilling
  1. Refrigerate the bars for at least 4 hours, or until they are set.
  2. Once set, cut into squares and serve.

Notes

These bars are best served chilled and can be garnished with a dollop of whipped cream and an extra slice of strawberry. They also pair well with vanilla ice cream. To store, keep in an airtight container in the refrigerator for 4-5 days, or freeze for up to 2-3 months.
