Preparation
- Crush the Oreo cookies in a food processor until they become fine crumbs. Mix the crumbs with melted butter until fully combined.
- Press this mixture into the bottom of a greased 9x9 inch baking pan to form a firm crust.
Cheesecake mixture
- In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy.
- Gently fold in the whipped topping until everything is well combined.
Assembly
- Pour the cheesecake mixture over the Oreo crust, smoothing the top to create an even layer.
- Top with diced strawberries, pressing them gently into the cheesecake layer to secure them.
Chilling
- Refrigerate the bars for at least 4 hours, or until they are set.
- Once set, cut into squares and serve.
Notes
These bars are best served chilled and can be garnished with a dollop of whipped cream and an extra slice of strawberry. They also pair well with vanilla ice cream. To store, keep in an airtight container in the refrigerator for 4-5 days, or freeze for up to 2-3 months.
