Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature for best results.
  • 3/4 cup granulated sugar Can use brown sugar for a different flavor.
  • 1 large egg For vegan version, substitute with flax egg.
  • 1 teaspoon vanilla extract
Flavor Additions
  • 1 tablespoon matcha powder
  • 1/2 cup freeze-dried strawberries, crushed Crush into smaller pieces for even distribution.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and mix until combined.
  6. Divide the dough into two portions. To one portion, add the matcha powder and mix well.
  7. To the other portion, stir in the crushed freeze-dried strawberries.
Baking
  1. Using a tablespoon, drop spoonfuls of each dough onto the baking sheet, creating a swirl effect.
  2. Bake for 10-12 minutes until the edges are golden.
  3. Let cool before serving.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, refrigerate for up to two weeks or freeze for up to three months.
