For the cookie dough
  • 1 cup unsalted butter, softened Use fresh, unsalted butter for best results.
  • 3/4 cup powdered sugar Sifted if necessary.
  • 1 teaspoon vanilla extract For added flavor.
  • 2 cups all-purpose flour Sift before measuring for accuracy.
  • 1/2 cup cornstarch Helps create a tender texture.
  • 1/4 teaspoon salt To balance sweetness.
For the mix-in
  • 1/2 cup chopped fresh strawberries Use fresh strawberries for the best flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until smooth.
  3. Mix in the vanilla extract.
  4. In another bowl, whisk together the flour, cornstarch, and salt. Gradually add to the butter mixture until just combined.
  5. Fold in the chopped strawberries gently.
Baking
  1. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  2. Bake for 12-15 minutes or until the edges are lightly golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve your cookies warm with milk or coffee. Store in an airtight container for up to 7 days, or freeze for up to 3 months.
