  • 1 medium butternut squash, peeled and cubed
  • 2 fillets salmon
  • 2 tablespoons miso paste
  • 1 tablespoon chili paste
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the cubed butternut squash with olive oil, salt, and pepper. Spread the squash on a baking tray.
  3. In a separate bowl, mix miso paste and chili paste together. Brush this mixture over the salmon fillets.
  4. Place the salmon on the tray with the squash.
Cooking
  1. Roast in the preheated oven for about 20-25 minutes or until the squash is tender and the salmon is cooked through.
  2. Garnish with chopped green onions before serving.

Notes

Cut the squash into even cubes for uniform cooking. Let the salmon sit with the miso-chili mixture for at least 15 minutes before roasting. Adjust chili paste to taste for spiciness.
