Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the cubed butternut squash with olive oil, salt, and pepper. Spread the squash on a baking tray.
- In a separate bowl, mix miso paste and chili paste together. Brush this mixture over the salmon fillets.
- Place the salmon on the tray with the squash.
Cooking
- Roast in the preheated oven for about 20-25 minutes or until the squash is tender and the salmon is cooked through.
- Garnish with chopped green onions before serving.
Notes
Cut the squash into even cubes for uniform cooking. Let the salmon sit with the miso-chili mixture for at least 15 minutes before roasting. Adjust chili paste to taste for spiciness.
