Ingredients
  

Cucumber
  • 2 large large cucumbers
Spicy Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili garlic sauce
  • 1/4 cup warm water
Garnishes
  • to taste Chopped peanuts For garnish
  • to taste Fresh cilantro or green onions For garnish

Method
 

Preparation
  1. Wash the cucumbers thoroughly and cut them into thin slices or sticks.
  2. In a bowl, combine the peanut butter, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, chili garlic sauce, and warm water. Mix well until smooth and creamy.
  3. In a large bowl, toss the cucumber slices or sticks with the spicy peanut sauce until coated.
  4. Transfer cucumbers to a serving plate and sprinkle with chopped peanuts and fresh cilantro or green onions.
  5. Serve immediately or chill in the fridge for 30 minutes to enhance flavors.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For extra crunch, choose cucumbers with a lot of seeds. Adjust the spice level according to your preference by modifying the chili garlic sauce.
