  • 1 pound shrimp, peeled and deveined Fresh or thoroughly thawed if frozen.
  • 2 tablespoons blackening seasoning Adjust according to spice preference.
  • 2 tablespoons olive oil For cooking the shrimp.
  • 8 ounces egg noodles Cooked al dente.
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk.
  • 1 tablespoon Dijon mustard
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish For serving.

Method
 

Preparation
  1. Cook the egg noodles according to package instructions; drain and set aside.
  2. In a bowl, toss the shrimp with blackening seasoning until well coated.
Cooking
  1. In a large skillet, heat olive oil over medium heat. Add the seasoned shrimp and cook until blackened and cooked through, about 2-3 minutes per side. Remove the shrimp and set aside.
  2. In the same skillet, add the chopped onion and minced garlic; sauté until translucent.
  3. Add the sliced mushrooms and cook until soft.
  4. Stir in the heavy cream and Dijon mustard; bring to a simmer.
  5. Add the cooked noodles to the skillet; mix well.
  6. Fold in the blackened shrimp; season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on low heat adding a splash of milk or cream if needed.
