  • 12 ounces spaghetti
  • 2 tablespoons olive oil
  • 5 cloves garlic, thinly sliced Fresh garlic is recommended for best flavor.
  • 5 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional) Adjust based on preferred spice level.
  • 1/4 cup grated Parmesan cheese Can be substituted with vegan cheese for vegan option.
  • 1 tablespoon lemon juice
  • to taste salt and black pepper
  • 2 tablespoons chopped fresh parsley For garnish.

Method
 

Preparation
  1. Cook spaghetti in salted boiling water until al dente.
  2. Reserve 1/2 cup pasta water, then drain.
Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced garlic and cook until fragrant and lightly golden.
  3. Stir in red pepper flakes if using.
  4. Add spinach and cook until wilted.
  5. Add cooked spaghetti to the skillet and toss well.
  6. Add lemon juice and a splash of reserved pasta water.
  7. Season with salt and black pepper.
  8. Remove from heat and mix in Parmesan and parsley.
Serving
  1. Serve immediately while warm, garnished with extra Parmesan cheese and fresh parsley.

Notes

This dish is best served hot. It pairs well with a side salad and crusty bread. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
