Preparation
- Slice the chicken breasts into even 1-inch cubes.
- In a small bowl, whisk together the chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Toss the chicken pieces in this spice blend until thoroughly coated.
- Dice the bell pepper, rinse the black beans, and prepare your rice if you haven’t already.
Cooking
- Heat the olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken in a single layer and sear for about 5 to 7 minutes, until golden brown and the internal temperature reaches 165°F.
- Remove the chicken from the skillet and set aside.
- In the same pan, sauté the bell peppers and corn for 3 minutes.
Plating
- Start with a generous base of warm rice in each bowl.
- Divide the cooked chicken, sautéed peppers, corn, and black beans evenly among bowls.
- Top each bowl with fresh avocado slices and chopped cilantro.
- Squeeze a lime wedge over the top and add Greek yogurt or hot sauce if desired.
Notes
To avoid overcrowding the skillet when browning the chicken. Cook rice in chicken broth for added flavor. Keep avocado and lime separate when meal prepping.
