Preparation
- Pat the beef cubes dry with paper towels and season lightly with salt and pepper.
- Halve the baby potatoes and chop the onion into roughly 1-inch pieces.
- Place the potatoes, onion, and minced garlic at the bottom of a slow cooker.
- Lay the seasoned beef cubes on top of the vegetables.
- In a small bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, thyme, rosemary, and black pepper.
- Pour the mixture over the beef and vegetables.
- Distribute cubed butter across the top. Do not stir.
Cooking
- Cover the slow cooker and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
- Once cooked, gently stir to combine everything before serving.
- Garnish with fresh chopped parsley and serve with garlic butter sauce.
Notes
Store leftovers in an airtight container for up to 3-4 days. Reheat in the microwave or on the stovetop.
