  • 3 lb beef chuck roast, cut into 1.5-inch cubes
  • 1.5 lbs baby potatoes, halved
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • Salt (to taste)
  • 1/2 cup salted butter, cubed
  • 2 tbsp fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Pat the beef cubes dry with paper towels and season lightly with salt and pepper.
  2. Halve the baby potatoes and chop the onion into roughly 1-inch pieces.
  3. Place the potatoes, onion, and minced garlic at the bottom of a slow cooker.
  4. Lay the seasoned beef cubes on top of the vegetables.
  5. In a small bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, thyme, rosemary, and black pepper.
  6. Pour the mixture over the beef and vegetables.
  7. Distribute cubed butter across the top. Do not stir.
Cooking
  1. Cover the slow cooker and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
  2. Once cooked, gently stir to combine everything before serving.
  3. Garnish with fresh chopped parsley and serve with garlic butter sauce.

Notes

Store leftovers in an airtight container for up to 3-4 days. Reheat in the microwave or on the stovetop.
