Preparation
- Season the chicken breasts with salt and pepper and place them in the slow cooker.
- Pour the fig jam over the chicken, ensuring it's well coated.
Cooking
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
- During the last 30 minutes of cooking, add the slices of Brie cheese on top of the chicken.
Serving
- Serve with mashed potatoes, rice, or roasted vegetables, garnished with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop over low heat. For added texture, stir in some chopped walnuts or pecans during the last 30 minutes.
