Preparation
  1. Season the chicken breasts with salt and pepper and place them in the slow cooker.
  2. Pour the fig jam over the chicken, ensuring it's well coated.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
  2. During the last 30 minutes of cooking, add the slices of Brie cheese on top of the chicken.
Serving
  1. Serve with mashed potatoes, rice, or roasted vegetables, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop over low heat. For added texture, stir in some chopped walnuts or pecans during the last 30 minutes.
