Preparation
- Begin by heating the oil in a skillet over medium heat. Sear the chunks of beef until they are browned on all sides.
- Deglaze the pan with a splash of the beef stock, scraping up any caramelized bits. Transfer the beef and deglazed mixture into your slow cooker.
- Add the remaining beef stock, red curry paste, fish sauce, brown sugar, sliced onions, and coconut milk to the slow cooker. Stir to combine.
Cooking
- Cover and cook on low for about 6-8 hours or high for 4-5 hours until the beef is tender.
- Near the end of cooking, stir in the haricots verts, fresh spinach, and lime juice.
Serving
- Garnish your curry with fresh cilantro leaves and serve hot, ideally with jasmine rice or warm naan.
