For the Sweet Potatoes
  • 2 large Sweet potatoes Washed, peeled, and cubed
For the Sloppy Joe Mixture
  • 1 pound Ground beef or turkey Choose according to preference
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1 cup Ketchup For sweetness and flavor
  • 1 tablespoon Mustard For tanginess
  • 1 tablespoon Worcestershire sauce For umami flavor
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Pepper Freshly ground
For Garnish
  • 1/2 cup Dill pickles Sliced
  • 1/2 cup Pickled red onions For tangy flavor
  • 1/4 cup Jalapeños Sliced, adjust for spice preference

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into cubes and spread them on a baking sheet. Drizzle with oil, salt, and pepper.
  3. Roast for 25-30 minutes until tender.
Cooking
  1. In a skillet, cook diced onion and garlic until softened.
  2. Add ground beef or turkey, cooking until browned.
  3. Stir in ketchup, mustard, Worcestershire sauce, salt, and pepper. Simmer for 10 minutes.
Assembly
  1. Assemble the bowls by adding roasted sweet potatoes and topping with the sloppy joe mixture.
  2. Garnish with dill pickles, pickled red onions, and jalapeños. Serve warm.

Notes

Store leftover mixtures in airtight containers in the refrigerator for up to 3 days. Reheat sweet potatoes in the oven and the sloppy joe mixture in a skillet.
