Main Ingredients
  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 8 oz whole wheat fettuccine
  • 2 cups cauliflower florets
  • 1 cup chicken broth
  • 1 cup non-fat Greek yogurt
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp Olive oil

Method
 

Cooking the Pasta
  1. Cook the whole wheat fettuccine according to package directions. Drain and set aside.
Cooking the Chicken
  1. In a large skillet, heat a teaspoon of olive oil over medium heat. Add the diced chicken and cook until browned and cooked through.
  2. Add minced garlic and cook for an additional minute.
Preparing the Broccoli
  1. Steam or boil the broccoli florets until tender, then set aside.
Making the Sauce
  1. In a blender, combine cooked cauliflower, chicken broth, Greek yogurt, salt, and pepper. Blend until smooth to create a creamy sauce.
Combining Ingredients
  1. Combine the cooked fettuccine, chicken, broccoli, and creamy sauce in the skillet. Stir well to combine and heat through.
  2. Serve with grated Parmesan cheese on top.

Notes

Serve immediately for best results. Add a splash of chicken broth when reheating to keep the sauce creamy. Avoid reheating in the microwave.
