Ingredients
  

Rice Base
  • 1 cup Rice Jasmine or basmati rice recommended.
Shrimp and Vegetables
  • 1 lb Shrimp Use fresh or thawed shrimp.
  • 1 cup Vegetables Use bell peppers, carrots, and cucumbers or any seasonal vegetables.
Spicy Mayo
  • 1/4 cup Mayonnaise Mix with sriracha to taste.
  • 1-2 tbsp Sriracha Adjust to desired spice level.
Sauces and Garnishes
  • 2 tbsp Soy sauce To drizzle over the bowl.
  • 1 tbsp Sesame seeds For garnish.
  • 1 each Lime For squeezing on top.

Method
 

Prepare the Rice
  1. Cook the rice according to package instructions.
Cook the Shrimp
  1. Sauté shrimp in a pan until pink and cooked through, about 3-4 minutes.
Make Spicy Mayo
  1. In a small bowl, mix mayonnaise with sriracha to taste.
Assemble the Bowl
  1. Place rice at the bottom of the bowl.
  2. Top with cooked shrimp and your choice of vegetables.
  3. Drizzle with soy sauce and spicy mayo, and garnish with sesame seeds and a squeeze of lime.
  4. Serve immediately or prepare for meal prep.

Notes

These bowls can be served warm or cold and are perfect for lunch on the go or picnics. Store leftovers in separate airtight containers.
