Preparation
- Preheat your oven to 425°F (220°C).
- On a large sheet pan, combine the sliced sausage, bell pepper, zucchini, and cherry tomatoes.
- Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss until everything is well coated.
Cooking
- Roast in the preheated oven for about 15 minutes.
- Add the tortellini to the sheet pan and stir to combine.
- Roast for an additional 10-15 minutes, or until the sausage is cooked through and the tortellini is heated.
- Serve hot, topped with grated Parmesan cheese if desired.
