Main ingredients
  • 1 package cheese tortellini, frozen or fresh (about 10 oz)
  • 1 lb Italian sausage, sliced Spicy or mild based on preference.
  • 1 piece bell pepper, chopped Any color bell pepper will work.
  • 1 piece zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons olive oil Can substitute with other oils.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving) Optional topping.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. On a large sheet pan, combine the sliced sausage, bell pepper, zucchini, and cherry tomatoes.
  3. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss until everything is well coated.
Cooking
  1. Roast in the preheated oven for about 15 minutes.
  2. Add the tortellini to the sheet pan and stir to combine.
  3. Roast for an additional 10-15 minutes, or until the sausage is cooked through and the tortellini is heated.
  4. Serve hot, topped with grated Parmesan cheese if desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
