- Drizzle olive oil into a large skillet over medium heat until shimmering.
- Add the diced onion and minced garlic. Sauté for about 2-3 minutes until fragrant and translucent.
- Increase the heat to medium-high and crumble in the ground turkey. Season with salt, pepper, and paprika, and cook for 5-7 minutes until nicely browned and no longer pink.
- Toss in the chopped zucchinis and diced bell pepper. Stir and cook for another 3-4 minutes until the veggies soften.
- Pour in the drained diced tomatoes and sprinkle with oregano. Stir well, lower the heat, and let it simmer for about 10 minutes.
- Before serving, check the seasoning and adjust with salt or pepper as necessary. Serve hot.
