Ingredients
  

Base Ingredients
  • 1 tbsp olive oil for cooking
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground turkey lean protein
Seasonings
  • to taste salt to season
  • to taste pepper to season
  • 1 tsp paprika
  • 1 tsp oregano
Vegetables
  • 2 zucchinis, chopped
  • 1 medium bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, drained

Method
 

Cooking
  1. Drizzle olive oil into a large skillet over medium heat until shimmering.
  2. Add the diced onion and minced garlic. Sauté for about 2-3 minutes until fragrant and translucent.
  3. Increase the heat to medium-high and crumble in the ground turkey. Season with salt, pepper, and paprika, and cook for 5-7 minutes until nicely browned and no longer pink.
  4. Toss in the chopped zucchinis and diced bell pepper. Stir and cook for another 3-4 minutes until the veggies soften.
  5. Pour in the drained diced tomatoes and sprinkle with oregano. Stir well, lower the heat, and let it simmer for about 10 minutes.
  6. Before serving, check the seasoning and adjust with salt or pepper as necessary. Serve hot.

Notes

For extra nutrition, add spinach or kale. Perfect to pair with whole-grain rice or crusty bread. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
