  • 1 pound gnocchi (store-bought or homemade)
  • 3 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 cups beef or vegetable broth Beef for non-vegetarian, vegetable for vegetarian
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • to taste Salt and pepper Adjust to preference
  • 2 cups shredded mozzarella cheese Divided for mixing and topping
  • ½ cup grated Parmesan cheese
  • Fresh parsley, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 20-25 minutes.
  3. Stir in the thyme, balsamic vinegar, and broth, allowing it to simmer for about 5-10 minutes until slightly thickened. Season with salt and pepper to taste.
  4. In a large bowl, combine the cooked gnocchi with the caramelized onion mixture. Mix in half of the mozzarella cheese.
  5. Transfer the mixture into a greased baking dish, spreading it evenly. Top with the remaining mozzarella and Parmesan cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until bubbly and golden brown on top.
Serving
  1. Remove from the oven and let it sit for a few minutes. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place it in the oven at 350°F (175°C) for about 15-20 minutes. You can also freeze the dish for up to 2 months; thaw it overnight in the refrigerator before reheating. Experiment with cheese options for different flavors.
