Preparation
- In a large skillet over medium heat, cook the sausage until browned and cooked through. Drain excess grease and set aside.
- If using, sauté the onions and bell peppers in the same skillet until soft, about 3–4 minutes.
Mixing
- In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.
Baking
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Spread the thawed hash browns evenly in the dish, followed by the cooked sausage, sautéed veggies, and half of the shredded cheese.
- Pour the egg mixture evenly over the top and gently press the ingredients down with a spatula to soak.
- Sprinkle the remaining cheese on top.
- Bake for 40–45 minutes until the center is set and the top is golden brown.
- Let it rest for 10 minutes before slicing and serving.
Notes
Serve warm with fresh fruit or a light salad. Garnish with parsley or green onions if desired. Store leftovers in an airtight container for up to 3 days or freeze for longer storage. Reheat in the oven or microwave.
