  • 1 bell pepper, sliced Use any color of bell pepper for sweetness.
  • 2 carrots, sliced Can be substituted with other vegetables.
  • 2 tablespoons soy sauce Use gluten-free soy sauce for a gluten-free dish.
  • 1 tablespoon hot sauce (optional) Adjust according to how spicy you want it.
  • 2 tablespoons olive oil For cooking the sausage and vegetables.
  • to taste Salt and pepper Season to your liking.
  • to garnish Green onions (optional) Chopped for garnish.

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sausage and cook until browned, breaking it apart as it cooks.
  3. Add the chopped cabbage, bell pepper, and carrots to the skillet.
  4. Stir-fry for about 5-7 minutes, or until the vegetables are tender.
  5. Pour in the soy sauce and hot sauce (if using), and mix well.
  6. Season with salt and pepper to taste.
  7. Cook for another 1-2 minutes.
  8. Serve hot, garnished with green onions if desired.

Notes

Store leftovers in an airtight container; will keep for about 3-4 days.
