  • 8 oz cheese tortellini Cook according to package instructions.
  • 4 oz salami, diced
  • 4 oz fresh mozzarella, cubed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh basil, chopped
Dressing Ingredients
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar

Method
 

Preparation
  1. Cook the cheese tortellini according to package instructions, then drain and let cool.
  2. In a large bowl, combine the diced salami, mozzarella, cherry tomatoes, olives, red onion, and basil.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Add the cooled tortellini to the large bowl and pour the dressing over the top.
  5. Toss gently to combine all ingredients.
  6. Serve immediately or refrigerate for later.
