  • 1 each rotisserie chicken Skin and bones removed, meat shredded.
  • 1 cup barbecue sauce Any barbecue sauce of your choice.
  • 1 cup shredded cheese Cheddar or mozzarella preferred.
  • 1 each bell pepper, diced Any color bell pepper.
  • 1 each onion, diced Use yellow or white onion.
  • Tortillas or bread Tortillas or bread For wrapping or sandwich.
  • to taste salt and pepper For seasoning.
Optional Ingredients
  • to taste salad greens Optional topping.

Method
 

Preparation
  1. Remove the skin and bones from the rotisserie chicken and shred the meat.
Cooking
  1. In a skillet over medium heat, sauté the diced onion and bell pepper until softened.
  2. Stir in the shredded chicken and barbecue sauce, heating through.
Assembly
  1. Assemble the chicken mixture into tortillas or between slices of bread.
  2. Top with cheese and optionally salad greens.
Serving
  1. Serve warm, and enjoy your meal!

Notes
