- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery; sauté for about 5 minutes until the onion is translucent.
- Stir in the garlic powder, ground cumin, salt, and pepper; cook for another minute until fragrant.
- Add the sweet potatoes and russet potatoes to the pot, followed by the vegetable broth and white beans.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 25-30 minutes, or until all the vegetables are tender.
- Taste and adjust seasonings if necessary.
- Serve hot, garnished with fresh parsley if desired.
Notes
For extra flavor, consider adding a splash of lemon juice or a pinch of red pepper flakes. This stew can be made in a slow cooker as well.
