Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the broccoli, bell peppers, cherry tomatoes, and carrots with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the seasoned vegetables on a baking sheet in a single layer.
- Season the chicken breasts with salt and pepper and place them on the same baking sheet with the vegetables.
Cooking
- Roast in the oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
- Serve the roasted chicken and veggies over a bed of mixed greens.
Notes
Let leftovers cool completely before storing in an airtight container. It will keep well in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
