  • 2 pieces chicken breasts
  • 1 cup broccoli florets
  • 1 cup bell peppers, chopped
  • 1 cup cherry tomatoes
  • 1 cup carrots, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Mixed greens for serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the broccoli, bell peppers, cherry tomatoes, and carrots with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned vegetables on a baking sheet in a single layer.
  4. Season the chicken breasts with salt and pepper and place them on the same baking sheet with the vegetables.
Cooking
  1. Roast in the oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
  2. Serve the roasted chicken and veggies over a bed of mixed greens.

Notes

Let leftovers cool completely before storing in an airtight container. It will keep well in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
