  • 4 pcs Cornish hens
  • 1 whole yellow onion cut into quarters
  • 1 whole lemon cut into quarters
  • 4 sprigs Rosemary
  • to taste avocado oil (or olive oil)
  • to taste Chef Paul’s Magic Poultry seasoning
  • to taste Badia Complete seasoning
  • to taste unsalted lemon pepper
  • to taste ground mustard
  • to taste smoked paprika
  • to taste garlic powder
  • to taste onion powder
  • 1 stick of melted butter (salted)
  • to taste garlic powder (optional additional salted seasoning)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Coat the Cornish hens with avocado oil.
  3. Season the hens generously with Chef Paul’s Magic Poultry seasoning, Badia Complete seasoning, unsalted lemon pepper, ground mustard, smoked paprika, garlic powder, and onion powder.
  4. Stuff each hen with quarters of onion and lemon, and tuck rosemary sprigs inside.
  5. Inject the melted butter mixed with garlic powder into the hens for added flavor.
Cooking
  1. Place the seasoned hens in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (75°C).
  2. Let the hens rest for a few minutes before serving.

Notes

For extra crispy skin, let the hens sit uncovered in the fridge for a couple of hours after coating in oil and seasoning before roasting. Use a meat thermometer to ensure they’re perfectly cooked without drying out.
