Preparation
- Preheat the oven to 375°F (190°C).
- Coat the Cornish hens with avocado oil.
- Season the hens generously with Chef Paul’s Magic Poultry seasoning, Badia Complete seasoning, unsalted lemon pepper, ground mustard, smoked paprika, garlic powder, and onion powder.
- Stuff each hen with quarters of onion and lemon, and tuck rosemary sprigs inside.
- Inject the melted butter mixed with garlic powder into the hens for added flavor.
Cooking
- Place the seasoned hens in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (75°C).
- Let the hens rest for a few minutes before serving.
Notes
For extra crispy skin, let the hens sit uncovered in the fridge for a couple of hours after coating in oil and seasoning before roasting. Use a meat thermometer to ensure they’re perfectly cooked without drying out.
