  • 2 pieces lemons (juiced and zested)
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 4 cloves garlic (minced)

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
  3. Rub the mixture over the Cornish hens, ensuring to get under the skin for maximum flavor.
  4. Place the hens in a roasting pan and tuck fresh rosemary and thyme inside each hen.
Cooking
  1. Roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (75°C).
  2. Let rest for 10 minutes before carving and serving.
