Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the carrots and potatoes with olive oil, salt, and pepper.
- Place the Cornish hens in a roasting pan and rub them with butter, then sprinkle with rosemary, thyme, and sage.
- Surround the hens with seasoned veggies in the pan.
Cooking
- Roast in the preheated oven for about 50-60 minutes or until the internal temperature of the hens reaches 165°F (74°C).
- Let rest for 10 minutes before serving.
Notes
For an extra touch, drizzle some of the pan juices over the hens and veggies before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
