- Pat the Cornish hens dry with paper towels to ensure a crispy skin.
- Rub the hens thoroughly with olive oil, then season generously with salt, black pepper, garlic powder, and dried thyme.
- Place a lemon half inside each hen.
Cooking
- Arrange the hens breast-side up in a roasting pan.
- Roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (75°C).
- Let the hens rest for 10 minutes before carving.
- Garnish with fresh herbs if desired and serve hot.
Notes
