For the Roasted Carrots
  • 1 pound carrots, peeled and halved lengthwise Fresh, firm carrots recommended.
  • 2 tablespoons olive oil For tossing the carrots.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
For the Whipped Ricotta
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil For whipping with the ricotta.
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Hot Honey
  • 2 tablespoons honey Heated gently.
  • 1/2 teaspoon chili flakes For added spice.
For Garnish
  • Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Toss carrots with olive oil, salt, pepper, and thyme until evenly coated.
  3. Spread carrots on a baking sheet in a single layer.
Cooking
  1. Roast for 25–30 minutes until golden and caramelized.
Whipped Ricotta
  1. In a bowl, whip ricotta with olive oil, lemon juice, salt, and pepper until smooth and fluffy.
Preparing Hot Honey
  1. Warm honey gently in a small pan and stir in chili flakes to create hot honey.
Assembly
  1. Spread whipped ricotta onto a serving plate.
  2. Top with roasted carrots, drizzle hot honey, and garnish with fresh parsley.
  3. Serve immediately while warm.

Notes

Store components separately to maintain freshness. Reheat the carrots before serving.
