Main Ingredients
  • 2 cups shredded chicken Use rotisserie chicken for convenience.
  • 1 cup sour cream Can substitute with Greek yogurt.
  • 1 can cream of chicken soup Cream of mushroom or cheese soup can be used as alternatives.
  • 1 cup shredded cheese Cheddar or your preferred cheese.
  • 1 cup crushed Ritz crackers Any buttery cracker can be used.
  • 1/4 cup melted butter To coat the crushed crackers.
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the shredded chicken, sour cream, cream of chicken soup, and half of the shredded cheese. Season with salt and pepper to taste.
  3. Transfer the mixture to a greased baking dish.
Topping
  1. In another bowl, combine the crushed Ritz crackers with melted butter and stir until the crackers are well coated.
  2. Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.
  3. Top with the remaining shredded cheese.
Baking
  1. Bake in the preheated oven for about 25-30 minutes or until the casserole is bubbly and the cracker topping is golden brown.
  2. Let it cool slightly before serving.

Notes

Serve with a green salad or steamed vegetables for a complete meal. Leftovers can be stored in an airtight container for up to 3 days. Freeze unbaked for up to 3 months, thaw in the refrigerator overnight before baking.
