Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the shredded chicken, sour cream, cream of chicken soup, and half of the shredded cheese. Season with salt and pepper to taste.
- Transfer the mixture to a greased baking dish.
Topping
- In another bowl, combine the crushed Ritz crackers with melted butter and stir until the crackers are well coated.
- Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.
- Top with the remaining shredded cheese.
Baking
- Bake in the preheated oven for about 25-30 minutes or until the casserole is bubbly and the cracker topping is golden brown.
- Let it cool slightly before serving.
Notes
Serve with a green salad or steamed vegetables for a complete meal. Leftovers can be stored in an airtight container for up to 3 days. Freeze unbaked for up to 3 months, thaw in the refrigerator overnight before baking.
