  • 4 pieces boneless chicken breasts
  • 1 cup ricotta cheese Use fresh for best flavor.
  • 2 cups marinara sauce Ensure it's gluten-free if needed.
  • 1 cup shredded mozzarella cheese Fresh mozzarella can also be used.
  • Salt and pepper to taste
  • Olive oil (for drizzling)
  • Fresh basil (optional, for garnish) Use for garnish before serving.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper and place them in a baking dish.
  3. Spread the ricotta cheese evenly over the chicken breasts.
  4. Pour marinara sauce over the ricotta layer.
  5. Sprinkle shredded mozzarella cheese on top of the sauce.
  6. Drizzle a little olive oil over everything.
Cooking
  1. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
  2. Garnish with fresh basil if desired and serve.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, bake at 350°F (175°C) for about 15-20 minutes. Can also be frozen for up to 2 months.
