Refreshing Lemon Lime Cherry Pistachio Cheesecake

Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • cups granulated sugar
For the filling
  • 16 oz cream cheese, softened
  • 1 cups granulated sugar
  • 3 large eggs
  • 0.5 cups sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • Zest of 1 lemon
  • Zest of 1 lime
For the topping
  • 1 cup cherries, pitted and halved (fresh or canned)
  • ¼ cup pistachios, chopped
  • Additional lemon and lime zest for garnish

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.
  3. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  4. Bake for 10 minutes, then allow it to cool.
Making the filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Gradually add sugar and continue mixing until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in sour cream, lemon juice, lime juice, lemon zest, and lime zest until fully incorporated.
Baking
  1. Pour the filling over the cooled crust and smooth the top with a spatula.
  2. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
  3. Once baked, turn off the oven and crack the oven door open.
  4. Let the cheesecake cool in the oven for about an hour to prevent cracking.
  5. After it cools, refrigerate the cheesecake for at least 4 hours or overnight.
Serving
  1. Before serving, top with halved cherries and sprinkle chopped pistachios on top.
  2. Garnish with additional lemon and lime zest if desired.

Notes

Store any leftover cheesecake in an airtight container in the refrigerator. It will stay fresh for up to 5 days. Freeze for up to three months if wrapped tightly.
