  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
Wet Ingredients
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until fully combined.
  3. In a large bowl, mix together oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined. Be careful not to overmix!
  5. Fill the prepared cupcake liners about 2/3 full with batter.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool completely before frosting with your favorite cream cheese icing.

Notes

For a richer flavor, you can replace some of the vegetable oil with melted butter. Store your cupcakes in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
