Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and buttermilk until combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture; mix until just combined.
- Stir in white chocolate chips and a few drops of red food coloring until the desired color is achieved.
Baking
- Drop spoonfuls of dough onto the prepared baking sheets, spaced a couple of inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers remain slightly soft.
- Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container for up to a week. For longer storage, freeze them with parchment layers in between.
