Ingredients
  

For the fish
  • 4 fillets tilapia fillets Fresh, skinless fillets work best.
  • 2 tablespoons olive oil Can substitute with canola or avocado oil.
  • Salt and pepper To taste.
For the roasted pepper sauce
  • 1 red bell pepper roasted and chopped
  • 1 yellow bell pepper roasted and chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh lemon juice Adds brightness to the dish.
  • 1 teaspoon fresh parsley, chopped Optional, for garnish.

Method
 

Roasting the Peppers
  1. Preheat your oven to 400°F (200°C).
  2. Slice the bell peppers in half, remove the seeds, and place them skin-side up on a baking sheet.
  3. Roast for about 20 minutes until charred. Let cool, then peel and chop.
Preparing the Sauce
  1. In a skillet over medium heat, add olive oil.
  2. Sauté garlic for 30 seconds until fragrant.
  3. Add the chopped roasted peppers and sauté for another 2-3 minutes.
  4. Add lemon juice, salt, and pepper, then reduce heat to low.
Cooking the Fish
  1. In another pan, season the tilapia fillets.
  2. Cook in olive oil over medium-high heat for 3-4 minutes on each side until golden.
Serving
  1. Serve the tilapia topped with roasted pepper sauce.
  2. Garnish with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat.
