Method
 

Preparation
  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth and bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed.
Cooking
  1. In a skillet, heat olive oil over medium heat.
  2. Add sliced mushrooms and sauté until they are golden brown.
  3. Stir in minced garlic and cook for about 1 minute until fragrant.
  4. Add the cooked quinoa to the skillet and mix well.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat with a splash of vegetable broth.
