Cooking the Chorizo
- In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it up with a spoon until it’s fully cooked and browned. Remove excess grease if desired.
Combining Cheeses
- Lower the heat and reduce the chorizo to a gentle simmer. Add the grated cheddar, Monterey jack, and mozzarella cheeses along with the chopped pickled jalapeños. Stir continuously until the cheese melts and becomes creamy.
Serving
- Once fully melted and combined, transfer the queso fundido to a serving dish. Garnish with a sprinkle of extra chorizo and a dollop of pico de gallo on top.

Notes
For the best melt, use freshly grated cheese. You can customize the spice level by adding more chopped jalapeños or hot sauce.
