  • 1 cup canned pumpkin puree Ensure it is plain pumpkin, not pie filling
  • 1 cup crumbled feta cheese Use high-quality feta for best flavor
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced Can use roasted garlic for a sweeter flavor
Flavoring Ingredients
  • 1/2 teaspoon dried thyme or rosemary
  • 1/4 teaspoon red pepper flakes Optional, for a hint of heat
  • to taste Salt and black pepper Adjust based on feta saltiness.
Optional Garnish
  • to taste Toasted pumpkin seeds (pepitas)
  • to taste Drizzle of olive oil

Method
 

Preparation
  1. Place the pumpkin puree, crumbled feta cheese, olive oil, honey, and minced garlic into a food processor or blender.
  2. Add the dried thyme, red pepper flakes, and a pinch of black pepper.
  3. Pulse the mixture several times until the ingredients are well combined. For a smoother dip, blend on high for 30 seconds; for a chunkier dip, pulse only a few times.
  4. Taste the dip, and if needed, add extra salt based on the saltiness of your feta.
Chilling
  1. Transfer the mixture to a serving bowl and cover it.
  2. Refrigerate for at least 30 minutes to allow the flavors to meld together.
Serving
  1. Before serving, create a swirl on the top with a spoon, drizzle with olive oil, and sprinkle with toasted pumpkin seeds.

Notes

Store the dip in an airtight container in the refrigerator for 3-4 days. Before serving leftovers, stir to recombine as oil may separate.
