Ingredients
  

Dry Ingredients
  • 2 cups rolled oats Use certified gluten-free if needed
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons chia seeds or flaxseed meal
  • A pinch salt
Wet Ingredients
  • 1/2 cup pumpkin puree Not pumpkin pie filling
  • 1/2 cup almond butter or peanut butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
Mix-ins
  • 1/2 cup mini chocolate chips

Method
 

Preparation
  1. In a large mixing bowl, combine the rolled oats, pumpkin pie spice, cinnamon, chia seeds, and a pinch of salt. Stir well.
  2. Add the pumpkin puree, nut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
  3. Stir the mixture vigorously until all the oats are coated and the dough is thick and sticky.
  4. Fold in the mini chocolate chips.
  5. Place the bowl in the refrigerator for at least 30 minutes.
  6. After chilling, use a tablespoon or small cookie scoop to portion out the dough.
  7. Roll the portions into smooth, round balls about one inch in diameter.
  8. Place the finished balls on a parchment-lined tray or directly into a storage container.

Notes

Store energy balls in an airtight container with parchment paper between layers to prevent sticking. Can be refrigerated for up to 1 week or frozen for up to 3 months.
