Ingredients
  

For the cookies
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
For the frosting
  • 1/2 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the pumpkin, egg, and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes or until the cookies are set.
  8. Allow cookies to cool completely.
Frosting
  1. For the frosting, beat together the cream cheese, powdered sugar, and vanilla until smooth.
  2. Spread the frosting on cooled cookies.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate them for up to two weeks.
