Ingredients
  

Wet Ingredients
  • 1 cup canned pumpkin puree (not pumpkin pie filling) Ensure it's pure pumpkin puree for best results.
  • 1 cup white granulated sugar
  • 1/2 cup vegetable oil Can use melted butter or unsweetened applesauce as alternatives.
  • 1 teaspoon vanilla extract
  • 1 large egg egg Can substitute with a flax egg for vegan version.
  • 1 teaspoon milk To dissolve baking soda.
Dry Ingredients
  • 2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 2 teaspoons baking powder Check freshness for best results.
  • 1 teaspoon ground cinnamon Can substitute with pumpkin pie spice.
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
Chocolate Chips
  • 2 cups semi-sweet chocolate chips Can use white chocolate chips or butterscotch chips as alternatives.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or lightly grease them.
  2. In a large mixing bowl, combine the pumpkin puree, granulated sugar, vegetable oil, and vanilla extract. Whisk until the mixture is smooth.
  3. Add the egg to the pumpkin mixture and beat well until fully incorporated.
  4. In a medium bowl, whisk together the flour, baking powder, ground cinnamon, and salt.
  5. In a small cup, dissolve the baking soda into the teaspoon of milk. Stir this into the wet pumpkin mixture.
  6. Gradually add the dry flour mixture to the wet ingredients. Stir with a large spoon or spatula until just combined. Do not overmix.
  7. Gently fold in the semi-sweet chocolate chips until they are evenly distributed throughout the batter.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake for 10 to 12 minutes in the preheated oven. The cookies should look set but still feel soft to the touch.
  2. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 3-4 days. For longer storage, freeze the cookies for up to 3 months.
