Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 6 tablespoons melted unsalted butter
  • 1/4 cup granulated sugar for crust
For the filling
  • 16 ounces cream cheese, softened At room temperature for smooth texture
  • 3/4 cup granulated sugar for filling
  • 2 large eggs
  • 1 cup pure pumpkin puree not pumpkin pie filling
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a medium bowl, stir together graham cracker crumbs, melted butter, and 1/4 cup sugar until the mixture looks like wet sand.
  3. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
Filling
  1. In a large mixing bowl, beat softened cream cheese and 3/4 cup sugar until light and fluffy.
  2. Add the eggs one at a time, beating on low speed just until combined. Do not overmix.
  3. Stir in pumpkin puree, vanilla extract, pumpkin pie spice, and salt. Mix until color is consistent.
  4. Pour the pumpkin filling over the cooled crust and smooth the top.
Baking
  1. Bake for 45 to 50 minutes, until edges are set but the center has a slight jiggle.
  2. Remove from oven and let cool completely on a wire rack.
  3. Refrigerate for at least 4 hours or overnight before cutting into bars.

Notes

Serve chilled or at room temperature. Top with whipped cream or a sprinkle of cinnamon. Store tightly covered in the refrigerator for up to 5 days or freeze for 2-3 months.
