Preparation
- Preheat your oven to 325°F (165°C) and line an 8x8 inch baking pan with parchment paper.
- In a medium bowl, stir together graham cracker crumbs, melted butter, and 1/4 cup sugar until the mixture looks like wet sand.
- Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
Filling
- In a large mixing bowl, beat softened cream cheese and 3/4 cup sugar until light and fluffy.
- Add the eggs one at a time, beating on low speed just until combined. Do not overmix.
- Stir in pumpkin puree, vanilla extract, pumpkin pie spice, and salt. Mix until color is consistent.
- Pour the pumpkin filling over the cooled crust and smooth the top.
Baking
- Bake for 45 to 50 minutes, until edges are set but the center has a slight jiggle.
- Remove from oven and let cool completely on a wire rack.
- Refrigerate for at least 4 hours or overnight before cutting into bars.
Notes
Serve chilled or at room temperature. Top with whipped cream or a sprinkle of cinnamon. Store tightly covered in the refrigerator for up to 5 days or freeze for 2-3 months.
