  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 4 large eggs Ensure they are at room temperature for better mixing.
  • 1 teaspoon vanilla extract
Cream Cheese Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar

Method
 

Preparation and Batter Mixing
  1. Preheat the oven to 350°F (175°C) and grease a bread pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the sugars and oil, then add in the pumpkin, eggs, and vanilla; mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Cream Cheese Filling
  1. In a separate bowl, beat the cream cheese and powdered sugar together until smooth.
Assembly and Baking
  1. Pour half of the batter into the prepared pan.
  2. Spoon the cream cheese mixture over the batter in the pan, then add the remaining batter on top.
  3. Bake for 60-70 minutes or until a toothpick comes out clean.
  4. Let cool before slicing and serving.

Notes

Serve warm or at room temperature. A sprinkle of powdered sugar and pairing with coffee or spiced chai enhances the experience. Store leftovers wrapped tightly and use within 3 days, or freeze for longer storage.
