Ingredients
  

Main Ingredients
  • 1 cup pumpkin puree Use fresh if possible.
  • 1 cup sugar Granulated sugar.
  • 1/2 cup vegetable oil Can be substituted with melted coconut oil.
  • 2 pieces eggs Large eggs.
  • 1 1/2 cups all-purpose flour Can use a gluten-free blend for a gluten-free version.
Leavening and Spices
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Adjust for more spice.
  • 1/2 teaspoon nutmeg Can substitute with pumpkin spice.
  • 1/2 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine pumpkin puree, sugar, oil, and eggs until well blended.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let it cool before slicing.

Notes

Serve warm or at room temperature. Add powdered sugar, cream cheese, or butter for extra flavor. Store wrapped tightly at room temperature for up to 3 days, or refrigerate for a week.
