  • 1 cup cooked potatoes, diced Use leftover cooked potatoes.
  • 1 cup fresh spinach, chopped Fresh spinach is preferred for better flavor.
  • 1/2 cup onion, diced
  • 1/2 cup milk
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil or butter over medium heat and sauté onion until translucent.
  3. Add cooked potatoes and spinach, cooking until the spinach wilts.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the potato and spinach in the skillet.
  6. Cook for a few minutes on the stove until the edges begin to set.
  7. Transfer the skillet to the oven and bake for 15-20 minutes or until fully set and lightly golden.
  8. Let it cool slightly before slicing and serving.

Notes
