Pesto Parmesan Sourdough

  • 1 cup Sourdough starter
  • 4 cups All-purpose flour
  • 1.5 cups Water Adjust based on dough consistency
  • 1 tsp Salt
  • 1 cup Basil pesto
  • 1 cup Parmesan cheese Melted for topping

Method
 

Preparation
  1. In a large bowl, mix the sourdough starter with flour and water until combined.
  2. Let the dough rest for 30 minutes.
  3. Add salt and knead until smooth.
  4. Incorporate the basil pesto into the dough and knead again.
  5. Allow the dough to rise until doubled in size, about 4-6 hours.
  6. After rising, shape the dough and place it in a floured proofing basket.
  7. Let it rest for another 1-2 hours.
Baking
  1. Preheat the oven to 450°F (232°C).
  2. Gently invert the dough onto a baking sheet.
  3. Sprinkle melted Parmesan cheese on top.
  4. Bake for 30-35 minutes until golden brown.
  5. Let cool before slicing and enjoy!

Notes

Serve warm with soups or salads, or use for sandwiches. Store in a paper bag at room temperature, or freeze for later use. Experiment with different types of pesto for variation.
