Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Can substitute with chicken thighs if desired.
  • Salt and pepper to taste
For the Aji Verde Sauce
  • 1 cup cilantro Fresh cilantro preferred for best flavor.
  • 1 jalapeño, seeded Adjust according to spice preference.
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 2 tablespoons lime juice Fresh lime juice recommended.

Method
 

Cooking the Chicken
  1. Preheat your grill or skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill or cook the chicken for about 5-7 minutes on each side, or until cooked through.
Making the Aji Verde Sauce
  1. While the chicken is cooking, combine cilantro, jalapeño, garlic, olive oil, lime juice, and a pinch of salt in a blender.
  2. Blend until smooth.
Serving
  1. Once the chicken is cooked, drizzle the aji verde sauce over the top and serve with rice or vegetables.

Notes

For extra flavor, marinate chicken in lime juice, olive oil, and cilantro for at least 30 minutes before grilling. Store leftovers in an airtight container for up to 3 days.
