Ingredients
  

For the crust
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and diced Keep butter cold for a flaky crust.
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 6-8 tablespoons cold water Add water gradually to form dough.
For the filling
  • 6 cups sliced apples (such as Granny Smith or Honeycrisp) Toss with lemon juice to prevent browning.
  • 1 tablespoon lemon juice Helps prevent apples from browning.
  • 3/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup all-purpose flour Thickens the filling.
  • 1 cup toffee bits
  • 1 egg for egg wash Gives the crust a glossy finish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine flour, sugar, and salt for the crust. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in enough cold water to form a dough, then divide the dough in half, shape into discs, and refrigerate for at least 4 hours or overnight.
Assembly
  1. Roll out one disc of dough on a floured surface, place it in a 9-inch pie plate, and fill it with the sliced apples mixed with lemon juice, brown sugar, cinnamon, nutmeg, and flour.
  2. Sprinkle the toffee bits evenly over the apple mixture.
  3. Roll out the second disc of dough and create a lattice top or cover it with another piece of rolled-out dough. Trim and crimp the edges.
  4. Brush the crust with beaten egg.
Baking
  1. Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes until the apples are soft and the crust is golden brown.
  2. Allow the pie to cool for at least 30 minutes before serving.

Notes

Serve warm or at room temperature with vanilla ice cream or whipped cream for added richness. Store in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
