Pasta and main ingredients
  • 1 cup orzo pasta Cooked until al dente
  • 1 cup cherry tomatoes, halved Fresh
  • 1/2 cup sun-dried tomatoes, chopped Can use oil-packed for extra flavor
  • 1 cup feta cheese, crumbled For creaminess
  • 1/4 cup red onion, finely chopped Add sharpness
  • 1/4 cup fresh basil, chopped For a fresh flavor
Dressing
  • 3 tablespoons olive oil For dressing the salad
  • 2 tablespoons balsamic vinegar Can substitute with other vinegars
  • Salt and pepper to taste To season

Method
 

Preparation
  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, sun-dried tomatoes, feta cheese, red onion, and basil.
Dressing
  1. In a separate bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  2. Pour the dressing over the salad and toss to combine.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. If orzo absorbs dressing, add more olive oil or balsamic vinegar before serving.
