  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt Reduce or omit if using salted butter.
  • 1 teaspoon vanilla extract Vanilla bean paste can be used for enhanced flavor.
  • 1 large egg yolk For a vegan option, use 1 tablespoon flaxseed meal and 2.5 tablespoons water.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg yolk and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto a greased baking sheet, leaving space between each.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies shine on their own but pair well with tea or coffee. For a festive touch, dust with powdered sugar or dip half in melted chocolate. Store in an airtight container for up to a week, or freeze for up to three months.
