Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg yolk and vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Drop spoonfuls of dough onto a greased baking sheet, leaving space between each.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
These cookies shine on their own but pair well with tea or coffee. For a festive touch, dust with powdered sugar or dip half in melted chocolate. Store in an airtight container for up to a week, or freeze for up to three months.
