Preparation
- Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Spread the cookie dough evenly into the prepared baking pan.
Baking
- Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted comes out clean.
- Allow to cool completely.
Frosting
- For the frosting, beat together the powdered sugar, heavy cream, peppermint extract, and pink food coloring (if using) until smooth and creamy.
- Spread the frosting over the cooled cookie bars and sprinkle with crushed candy canes.
- Cut into bars and serve. Enjoy your festive treat!
